A complete lassi, chaas and buttermilk pouch plant with culturing, blending, chilling and form-fill-seal pouch packing, for chilled distribution.

Lassi and chaas move in enormous volumes through the North Indian dairy trade, almost entirely in film pouches under chilled distribution. The plant combines dairy processing — standardisation, pasteurisation, culturing, blending with sugar or spices — with a form-fill-seal pouch machine running under strictly controlled temperature. Everything after culturing runs cold, because the product is not shelf-stable and its whole distribution model assumes a 4°C chain. We scope the chillers, the cold room and the crate handling with the machine, since those determine whether the product survives to the retailer.

Common questions.

Can lassi be made shelf-stable?+

Yes, with retort or aseptic UHT processing, but it changes the product — the fresh cultured character is reduced. Most North Indian brands stay chilled because the trade already runs a cold chain and consumers expect the fresh taste.

Pouch or bottle for lassi?+

Pouch dominates on cost and is what general trade expects. Bottles and cups work for premium and modern-trade positioning. Many dairies run both from the same process section with different filling machines.
