FSSAI License

The FSSAI License, issued by the Food Safety and Standards Authority of India, is mandatory for any food or beverage manufacturing operation in India. License categories by capacity: - **Basic (FSSAI registration):** turnover < ₹12 Lakhs/year - **State License:** turnover ₹12 Lakhs – 20 Cr/year, OR capacity 100 kg/day – 2 MT/day - **Central License:** turnover > 20 Cr/year, OR capacity > 2 MT/day, OR multi-state operation, OR import/export For mineral water plants, **most plants of 60 BPM and above require Central License** (because daily capacity crosses 2 MT). Application is via fssai.gov.in (FoSCoS portal). Typical processing time: 30–60 days. Required documents include: company registration, plant layout, water source NOC, BIS application proof, machinery list with capacity, and a certified Food Safety Management System plan.
